Pastas alimenticias libres de gluten a base de arroz, una revisión

Resumen

En la actualidad, aumenta progresivamente la prevalencia de la enfermedad celíaca (EC) en el mundo, la cual es una enfermedad autoinmune ocasionada por la exposición al gluten, por lo tanto, se evidencia que a causa de esto las personas se predisponen a mejorar sus hábitos alimenticios y consecuentemente elegir productos libres de gluten. La industria alimentaria ha desempeñado un papel fundamental en el desarrollo e innovación de productos que favorezcan la salud de las personas, por lo que han sustituido cereales como el trigo y lo han reemplazado por arroz en productos muy consumidos como la pasta, reemplazando completamente la pasta tradicional a base de trigo. El arroz es un cereal que no contiene gluten. por lo que al momento de ser utilizado en la elaboración de pastas alimenticias se requieren procesos tecnológicos como la extrusión que ayuden al producto a tener consistencia y estabilidad durante la cocción.

En el presente documento se hace un énfasis corto sobre el gluten y su incidencia en el desarrollo de la enfermedad celíaca, también se realiza la recopilación de distintos estudios e investigaciones acerca de la elaboración de pastas alimenticias libres de gluten a base de arroz y la influencia del proceso de extrusión en las características fisicoquímicas y sensoriales del producto.
