■ Focus and SCOPE
Investigaciones Básicas y Aplicadas en Alimentos is a refereed electronic journal, with continuous frequency, edited by the Centro de Investigación y Desarrollo en Criotecnología de Alimentos (CIDCA) from Facultad de Ciencias Exactas de la Universidad Nacional de La Plata (La Plata, Argentina). CIDCA also depends on the Consejo Nacional de Investigaciones Científicas y Técnicas (CONICET) and the Comisión de Investigaciones de la provincia de Buenos Aires (CIC-PBA).
The journal provides a space for the publication of research in any discipline related to food science and technology, both nationally and internationally. The journal publishes unpublished, quality and impact research articles and reviews. Special issues may also be published on topics selected by the editorial team, and special issues of articles selected and reviewed by peers from scientific meetings, workshops, conferences and conferences on related topics.
The Universidad Nacional de La Plata, the main area in which the magazine is published, supports the movement of open access to knowledge as a common good, so the publication provides immediate and complete access to all its content and its editions have no charges or charges for the author nor for the reader.
The materials are published under a Creative Commons Atribución-NoComercial-CompartirIgual 4.0 Internacional (CC BY-NC-SA 4.0) Licence and according to its self-archiving policy, the deposit of preprint and postprint versions or the editor's version in institutional repositories is permitted. and thematic.

Investigaciones Básicas y Aplicadas en Alimentos was created in 2024 and has been published, since then, in electronic format. Since issue number 1 (2024), all materials published in the journal have a doi (Digital Object Identifier) and the editorial team uses iThenticate, a tool for detecting coincidences that allows you to verify and prevent plagiarism. Both resources are provided and financed by the Universidad Nacional de La Plata.
The journal reserves the right to accept or not accept contributions received, in accordance with its thematic scope and compliance with its editorial standards.
The journal publishes articles in the Spanish language, but if one of the authors is not a Spanish speaking, articles in the English language will also be accepted.
The responsibility for each published work regarding its content falls exclusively on its authors, releasing the editors from any legal responsibility.
■ PUBLICATION Frequency
Investigaciones Básicas y Aplicadas en Alimentos is a refereed scientific journal with continuous periodicity. The articles are published, individually and in sequential order, once they are approved through the peer review system.
The issues open in the month of April of the current year and close in the month of March of the following year. The reception of articles is open permanently.
■ SECTION Policies
Scientific Articles
Research articles: they are complete, original works, with a solid scientific basis that provide new knowledge in their area.
The length of the works will be between 8 and 20 pages, following the Template.
Review articles: Critical reviews should cover a topic of current interest or an emerging field. They should not be merely a compilation of published works but should include a critical analysis of the main results obtained by bringing together reports from various sources. These critical reviews should compare works, expose differences and similarities, and provide an overview of the "state of the art".
The length of the works will be between 8 and 20 pages, following the Template.
Technology transfer and extension
This type of work must present the results of a topic and/or project of extension, transfer and/or networking, which has found application in the food industry or socio-productive sector.

Editorial letters
This section is reserved for editors.
■ REVIEW system
The contributions received by the journal are analyzed by the editorial team in order to ensure that they respond to the scope declared by the publication and that they comply with its editorial policy. Those that do not meet these criteria are rejected or, at the discretion of the editor in charge, returned to the authors for adaptation.
For the evaluation of the contributions received, the journal uses the peer review process through the simple-blind peer review system.
All contributions are evaluated by two or more reviewers. As a result of this process, articles may be accepted, accepted with modifications or rejected, always on the basis of pertinent justifications.
When the evaluators indicate the need to make modifications for the eventual acceptance of the work, these will be communicated to the authors, who must agree to make them within a period of no more than 30 days.
If the opinions issued by the reviewers disagree on essential aspects, the papers will be sent to additional reviewers.
If necessary, the journal's editorial board will mediate to reach a final decision.

■ OPEN ACCESS Policy
The Universidad Nacional de La Plata promotes and supports the movement of open access to knowledge as a common benefit, under the principle that providing society with unrestricted scientific and academic production contributes to a greater exchange of global knowledge.
In line with this policy, Investigaciones Básicas y Aplicadas en Alimentos is a diamond open access publication: it does not charge authors any publication fee and offers readers immediate and full access to all its editions without restrictions of any type

Archive: the journal uses the LOCKSS system through PKP PN to create an archive distributed among the participating libraries, allowing these libraries to create permanent archives of the journal for preservation and restoration purposes.
Self-archiving: the journal allows self-archiving of the post-print version, both in institutional and thematic repositories and in authors' personal sites.
■ PRESERVATION Policy
The materials published in this journal are deposited in SEDICI, the institutional repository of the Universidad Nacional de La Plata. Automatic backups and remote copies, format adaptations, integrity checks and other activities required to ensure digital preservation are carried out through this repository. SEDICI's preservation policies can be consulted at http://sedici.unlp.edu.ar/pages/politicas#preservacion.
■ INTEROPERABILITY Protocol
Investigacines Básicas y Aplicadas en Alimentos is published through OJS (Open Journals System) and incorporates the OAI-PMH (Open Archive Initiative-Protocol for Metadata Harvesting) interoperability protocol at the URL https://revistas.unlp.edu.ar/ibaa/oai with the possibility of obtaining different formats for the metadata (rfc1807, nlm, marcxml, oai_marc and oai_dc) by entering the corresponding acronym in the URL as a value for the metadataPrefix parameter.
